Easy Veggie Salad Makes the Perfect Addition to All Your Summer Festivities

ParagraphIt's sad that summer is quickly coming to an end. I for one am not ready. Don't get me wrong, there are parts of every season that I love, but it seems each one comes and goes so quickly. However, the end of summer is always harder than the ending of the other seasons. I'm sure it's because schools are opening back up, and the fact that every advertisement on TV reminds you of it, right?

I say we boycott the end of summer; let's keep the summer vibe going for as long as we can. I've not had near-enough pool time, and I haven't been to the lake even once. That is unheard of.

This veggie salad is all about summer. It is one Kayla makes often and has featured during one of her "lives." She and her family love it, and so do I, for that matter. It's an easy summer veggie salad that is light, refreshing, and perfect for a hot summer day. The veggies are healthy and delicious, and the dressing is simple but flavorful. It is perfect for a picnic or cookout, or you can serve it as a side dish at dinner.

For us here in Kentucky, the tomato crop has been slow at producing delicious, vine-ripened, juicy tomatoes. We've had a few but not many. I'm hoping many of you have an abundance of not only tomatoes but also cucumbers because you'll need them for this veggie salad. If you don't have garden-fresh tomatoes and cucumbers, don't despair, because this veggie salad is also amazing with store-bought veggies.

We especially love this veggie salad paired with a BLT sandwich. Your taste buds are sure to scream for more!

Ingredients for Veggie Salad:

  • Cucumbers
  • Tomatoes
  • Avocados
  • Lemon
  • Olive Oil
  • Garlic Powder
  • Onion Powder
  • Salt
  • Pepper
  • Crushed Red Pepper


  1. This veggie salad is more about adding what you have and tasting as you go; therefore, we did not include amounts for each ingredient. Add as little or as much as you have or want. 
  2. Dice your cucumbers, tomatoes, and avocados into 1/2 inch pieces and add them to a bowl.
  3. Squeeze the juice of a whole lemon into the bowl (be careful to catch the seeds in your hand - you won’t want those in the veggie salad).
  4. Add in some olive oil (about a tablespoon or so).
  5. Add in spices to taste. You can be creative with this. Use caution when adding spices and herbs — you don’t want to overpower the salad. Start with small amounts, taste, and then adjust accordingly. This recipe really is a taste-as-you-go recipe. 
  6. Be careful to not mix too much; otherwise the avocados will become mushy and lose their shape.
  7. Be creative and have fun. You can add fresh grilled corn, shallots, peppers, jalapeños … it’s all about what you and your family like.
