Easy Sausage and Veggie Sheet Tray Meal is Perfect for the On-The-Go Family

This sausage and veggie sheet tray meal is one of our all-time favorite meals. It is easy to make, inexpensive, and full of flavor. It doesn’t need much seasoning either. You wouldn’t believe the flavor that the potatoes impart with just a little salt and pepper and all the veggies and sausage.
Ingredients:
This is really just about as easy as the ingredients. Preheat the oven to 425 degrees. Dice all your veggies and divide vegetables between two sheet trays. I use two sheet trays for this so that they cook evenly and brown slightly. If I put it all on one pan, it would take longer to cook and everything would just steam.
Pour olive oil over each tray of vegetables. A couple of tablespoons on each. Sprinkle 1 tsp of salt on each tray and ½ tsp of pepper on each tray. Then give it a mix. Spread the veggies back out so that they are in an even layer.
Cut your sausages into pieces. I usually cut each link into about five pieces and then lay your sausage on top of your vegetables.
Bake for about 30 minutes or until your potatoes are tender.
When they are just about done, I turn on the broil and move the tray closer to the top oven rack to brown the sausage and potatoes. Turn your sausage after one side browns.
For Griffin, we pick out the sausage, the potatoes, and the broccoli and put them in separate piles on his plate. But for Andrew and I, we just throw it all in a bowl and eat it together. Man, this one never disappoints us. It is always full of flavor!
